Hubby and I decided to cook a turkey New Years week when his sister was visiting for the holiday. This bird got talked about for over a week. How we would cook him with my MIL and then I asked my mom for her tips. We were told to cook him breast side down to keep the meat moist. Some people that s too are to flip him half way through the cooking ........it's the great turkey debate. Then hubby and I both looked up turkey and stuffing recipes online. He was a hot topic bird !
We took him out of the freezer two days before dinner to start the thawing process. He was heavvvvy frozen. After day one out on the counter he felt abit soft so we moved him to the garage for the night.
The night before we cooked him up we marinated him in the big pan. We rubbed him down with olive oil and spices ......oregano, salt, pepper, garlic powder and some vegetable base. He was well massaged, well relaxed and looked good ! I think I heard him moan half way through. Haha !
Finally after a week of talking, preparing, doing research it was turkey and stuffing day! We got up early and prepared a few things then around 8:30 we made the sign of the cross and threw the bird into the oven all covered in tin foil. We decided to do our stuffing separately in a dish and that would hopefully cook the bird a bit faster.
Our company was due to arrive around noon. So about eleven o'clock we took the bird out to flip breast side up (since hubby was here to help with the big flipping i decided to give it a try ) and holy cow ! He was cooked. He was so cooked the meat was falling off the bones. What a beautiful site ! Now what? Our bird was done one hour early ! Well some say to let him rest , so wrapped and all toasty he rested on the counter.
Our guests arrived and hubby and I hustled to get the potatoes mashed, the veggies served into bowls and the gravy boiled up. We all sat down, said grace and dug in. Everyone enjoyed it all. We all ate like pigs.
The turkey was a success. He was well talked about and turned out fine. When I joked about it being so talked about my sister- in-law said it best " a turkey s just an over sized chicken, what's the big deal?" And she was right. It was a breeze. The side dishes were more work as was my Oreo cheesecake.
